One pot pumpkin pasta

What goes with Halloween? That's right: self-carved pumpkins! Just right for the season and, above all, the time of year. This one-pot pumpkin pasta is perfect for the cold days and, in combination with a few other ingredients, a simple pumpkin is quickly transformed into a delicious pasta that will enchant everyone. Just remember: everything has to be eaten by midnight at the latest!

One pot pumpkin pasta

  • 500 g noodles
  • 700 g Hokkaido pumpkin
  • 700 ml water
  • 500 ml cream
  • 2 tbsp vegetable stock
  • 150 g pickled sun-dried tomatoes
  • 80 g walnuts
  • 80 g Parmesan cheese
  • 1 handful of basil leaves
  • Salt and pepper

Preparation

  1. Halve the pumpkin, remove the seeds and grate coarsely.
  2. Put the pasta, pumpkin, vegetable stock, cream and water in a pan and bring to the boil.
  3. Simmer over a medium heat for 8 to 10 minutes, stirring regularly.
  4. Season to taste with salt and pepper.
  5. Cut the dried tomatoes into small pieces and chop the walnuts.
  6. As soon as the pasta is creamy, stir in the tomatoes, walnuts and basil.

The pasta is ready so quickly, now simply arrange it on a plate, sprinkle with Parmesan and you’re ready to enjoy!
