Vegan cheese fondue

Fancy a cozy evening with friends or family and delicious food? Then here's a simple and super tasty recipe for cheese fondue, which is also vegan. The best thing about this recipe is that the cheese sauce is super versatile and can of course be modified as desired. In principle, the fondue can be served with anything you like, so feel free to recreate our recipe and find your favorite side dish.

For the fondue

  • 2 potatoes
  • 1 carrot
  • 100 g raw cashews
  • 360 ml water
  • 1 tbsp olive oil
  • 1 large onion
  • 2-4 garlic cloves
  • 4 tbsp yeast flakes
  • 2 tsp mustard
  • 1 1/3 tsp salt
  • 240 ml white wine
  • 3 tbsp tapioca starch

For the garnish

  • Bread
  • Potatoes
  • Vegetables of your choice

Preparation

  1. Peel and dice the potatoes and carrot.
  2. Bring to the boil in a pan with the cashews and water and simmer for about 10-15 minutes.
  3. Meanwhile, heat the oil in a pan.
  4. Add the onion and salt and fry for 3 minutes until translucent.
  5. Add the garlic and fry for a few minutes.
  6. Place everything in a blender with the yeast flakes, salt and mustard and blend until creamy.
  7. Then pour the sauce into a pan.
  8. Stir in the white wine and tapioca starch using a whisk and bring to the boil.
  9. Simmer briefly until a thick mixture forms.

The finished sauce can now be prepared in a fondue pot and served with bread and vegetables!
