Passion tea cocktail

• 300 ml ginger ale
• 100ml passion fruit juice
• 50 ml lime juice
• 100 g brown sugar
• 10 g peppermint tea
• 1 passion fruit
• Mint
• Crushed ice
• Optional 250 ml brown rum

Preparation

1. Pour the tea mixture into the tea strainer, bring to the boil with 750 ml water and leave to infuse for 5 minutes. Pour the finished tea into a carafe, add the sugar, passion fruit juice and lime juice, stir and chill.
2. Halve the passion fruit and scrape out the pith. Wash the mint, shake dry and pluck the leaves from the stalks.
3. Add the passion fruit pulp and ginger ale and, if necessary, the rum and mix.
4. Pour ice into glasses and top up with cocktail.
