Ingredients
For the fish fillets
- 2 fish fillets (e.g. cod or salmon)
- 2 tbsp breadcrumbs
- 1 tbsp chopped fresh herbs (e.g. parsley, dill)
- 1 tsp lemon zest, grated
- 1 tbsp olive oil
- Salt and pepper to taste
For the vegetable potato chips
- 1 zucchini
- 1 carrot
- 1 parsnip
- 1 tbsp olive oil
- Salt and pepper to taste
Fish fillets with a lemon and herb crust
- Mix together the breadcrumbs, herbs, lemon zest, olive oil, salt and pepper.
- Coat the fish fillets with the herb mixture.
- Place in one frying basket of the hot air fryer and cook at 180°C for 15-20 minutes.
Vegetable potato chips
- Cut the vegetables into thin slices.
- Mix the vegetable slices with olive oil, salt and pepper.
- Place in the second frying basket of the hot air fryer and bake at 160° C for 15-20 minutes until crispy.
