Raspberry and yogurt parfait

Raspberry and yogurt parfait
- 400 g fresh raspberries
- 250 g Greek cream yoghurt
- 2 sachets of vanilla sugar
- 2 egg whites
- 75 g sugar
- 1 pinch of salt
to garnish
- Fresh raspberries
- Mint
- Wafer pieces
- Powdered sugar
Preparation
- Finely puree the raspberries and then mix the raspberry puree with the cream yogurt and vanilla sugar.
- Beat the egg whites with a pinch of salt until stiff and slowly add the sugar. Now fold the beaten egg whites into the raspberry and yoghurt mixture.
- The parfait can now be filled into 6 heart-shaped mini ramekins and placed in the freezer for 4 hours.
- When the 4 hours have passed, the parfaits can be taken out of the freezer and garnished with a few fresh raspberries, some mint and wafer pieces and dusted with a little powdered sugar.
