Tomato mozzarella waffles

You only know sweet waffles with hot cherries and powdered sugar? Then you're really missing out. There are so many different ways you can use your waffle iron and with more than just the standard recipes - just dare to try something new! Try something savory, like this one: Tomato Mozzarella Waffles!

Ingredients
Ingredients for 8 portions
Tomato mozzarella waffles
  • 150 g wheat flour
  • 125 g spelt flour
  • 15 g fresh yeast
  • 125 ml lukewarm water
  • 2 eggs size M
  • 90 g pickled sun-dried tomatoes
  • 125 g mozzarella
  • 50 g Parmesan cheese
  • 3 tbsp olive oil
  • 1 handful of basil leaves
  • Salt and pepper

Preparation

  1. Place the flour in a bowl and make a small well in the center.
  2. Dissolve the yeast in the lukewarm water.
  3. Add the eggs and olive oil to the hollow and mix well.
  4. Season with salt and pepper.
  5. Cover and leave to rise in a warm place for approx. 1 hour.
  6. Meanwhile, chop the tomatoes and basil leaves, grate the Parmesan and dice the mozzarella.
  7. As soon as the dough is ready, fold in the remaining ingredients.
  8. Bake the waffles for a few minutes until golden brown and crispy.

You can refine the waffles with other ingredients to suit your taste.
