Bruschetta
Bruschetta with tomatoes is a classic of Italian cuisine and impresses with its simplicity and fresh taste. This delicious starter is perfect for summer evenings, as a light snack or as part of a Mediterranean buffet. With aromatic tomatoes, fresh basil and crispy bread, bruschetta is always a delight and can be prepared in just a few minutes.

- 4 medium sized ripe tomatoes
- 1 clove of garlic
- 1 handful of fresh basil
- 4-5 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- 1 baguette or ciabatta
- Balsamic cream
Preparation
- Wash the tomatoes, remove the stalk and cut into small cubes. Place the diced tomatoes in a bowl.
- Peel and finely chop the garlic clove or press through a garlic press. Add to the tomatoes.
- Wash the basil, shake dry and cut into fine strips. Also add to the tomatoes.
- Pour the olive oil over the tomato mixture, season with salt and pepper and mix well. Leave the tomato mixture to stand for approx. 10 minutes.
- In the meantime, slice the baguette or ciabatta and lightly brush both sides with olive oil.
- Toast the slices of bread in a pan, on the grill or in the oven until golden brown.
- Spread the tomato mixture on the toasted slices of bread. Drizzle with balsamic cream to taste and serve immediately.
