Fruity mini pancake skewers
Whether for breakfast or as a dessert, you can't go wrong with these chocolatey and fruity mini pancake skewers. The combination of fluffy pancakes, strawberries and bananas is already delicious, but as a skewer with a little Nutella, the whole thing looks great and is perfect for enjoying together. Ingredients for 4 skewers
Fruity mini pancake skewers
- 15 g rolled oats
- 30 g sugar
- 100 g flour
- 200 ml buttermilk
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tbsp butter (+ butter for frying)
- 1 egg
- 1 banana
- 4 strawberries
- Nutella
- 1 pinch of salt
Preparation
- Mix all the dry ingredients for the pancakes.
- Melt the butter and add to the dry ingredients together with the egg and buttermilk. Mix thoroughly with a hand mixer.
- Melt a little butter in a frying pan over a medium heat. Pour a heaped teaspoon of batter into the pan for each mini pancake. Fry for about 1-2 minutes per side until the pancakes are golden brown.
- Meanwhile, cut the banana into slices.
- Spread the pancakes with Nutella and skewer together with a strawberry and the banana slices as desired.
