Grilled caprese eggplant
Veggies watch out! There aren't many meat-free barbecue dishes around at the moment, but that's about to change. As one of our first meat-free barbecue recipes, I'm showing you a dish with fresh grilled fruit vegetables and delicious mozzarella. With its simple preparation, this recipe can be served in no time and is just as good as a tasty side dish.

Grilled caprese eggplant
- 2 eggplants
- 2 tomatoes
- 500 g mozzarella
- 10 fresh basil leaves
- Olive oil
- Salt
- Pepper
Preparation
- Preheat the grill to approx. 200 °C.
- Slice the mozzarella, tomatoes and eggplants.
- Brush the eggplant and tomato slices with oil and season evenly with salt and pepper.
- Grill over a direct medium heat with the lid closed as far as possible until the vegetables are tender. Turn once. Grill the eggplants for about 8 minutes and the tomatoes for 2-4 minutes.
- Arrange the eggplants, tomatoes, cheese and basil on one or more plates. Drizzle once more with olive oil.
