Grilled lime prawn skewers with avocado and coriander cream
This recipe adds another delicious fish recipe to your collection of barbecue recipes. The small prawns are much easier to grill on a skewer and are therefore very easy to serve. With a refreshing lime marinade, they are perfect for summer. I'll also show you a delicious avocado cream with fresh coriander. So go on, grab your prawns and get them on the barbecue.

Grilled lime prawn skewers with avocado and coriander cream
- For the lime prawns
- 500 g prawns
- Juice of 1 lime
- 3 tbsp olive oil
- 2 cloves of garlic
- 2 tsp chilli powder
- ½ tsp cumin
- ¼ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red bell pepper flakes
- For the avocado-cilantro cream
- 1 avocado
- 2 tbsp low-fat Greek yogurt
- 1 clove of garlic
- Juice of ½ lime
- 2 tbsp fresh coriander
- Salt
- Pepper
Preparation
Lime prawn skewers
- Peel and devein the prawns. chop 2 cloves of garlic. Grind the black pepper and cumin and squeeze the lime.
- Mix the lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, pepper and red bell pepper flakes in a bowl, pour into a resealable bag and add the prawns. Mix together and leave to marinate for 30 minutes.
- Preheat the grill to a medium heat (220°C), thread the prawns onto skewers and grill for about 2 minutes on each side (until they are no longer pink).
Avocado and coriander cream
- Deseed and split the avocado, chop 1 clove of garlic and the coriander.
- Blend the avocado, Greek yogurt, garlic, lime juice and coriander in a food processor until smooth.
- Season to taste with salt and pepper and serve immediately with the prawns.
