Lime and coriander grilled chicken
The Mexico Mule from the grill - well, almost. With a deliciously fresh marinade of coriander and lime, two ingredients overlap with the summery cocktail. The marinade in combination with grilled chicken fillets is perfect for the summer and will give your barbecue a new lease of life.

Lime and coriander grilled chicken
- 1 kg boneless and skinless chicken breast fillets
- 90 g honey
- 25 g coriander
- 4 tbsp lime juice
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 garlic cloves
Preparation
- Chop the coriander and garlic and mix with the lime juice, honey, soy sauce, olive oil, salt and pepper.
- Place the marinade in a vacuum bag with the chicken breast fillets and leave to marinate for 3 hours or overnight.
- Preheat the grill to medium heat (approx. 220 °C) and grill each side of the fillets for approx. 3-4 minutes.
