Ramazzotti Strawberry Cheesecake Ice Cream

Ingredients
Ingredients for 8 portions
For the croissants
- 70 g soft butter
- 140 g powdered sugar
- 250 ml milk
- 180 g flour
For the ice cream
- 100 ml Ramazzotti Crema Gelato alla Fragola liqueur
- 220 g cream cheese
- Milk and sugar to taste
- 220 g strawberries
- 3 tbsp sugar
- Juice of one lemon
Preparation
Croissant
- Place the melted butter, powdered sugar, milk and flour in a bowl.
- Mix everything well until you have a smooth batter.
- Preheat a croissant maker and grease lightly.
- Spoon the batter onto the waffle iron in batches and bake until golden brown.
- Once the croissants are baked through, shape them into croissants.
- Leave the finished croissants to cool on a wire rack.
Ice cream
- Pour the Ramazzotti Fragola liqueur into a bowl and mix with the cream cheese until smooth.
- Add the milk and sugar to taste and stir until smooth.
- Wash, clean and chop the strawberries.
- Puree half of the strawberries with 3 tablespoons of sugar and the juice of one lemon in a blender and mix with the remaining strawberry pieces.
- Prepare the ice cream maker and pour in the cream cheese mixture and 2 tablespoons of strawberry puree.
- Switch on the machine and freeze the ice cream according to the manufacturer’s instructions.
- Portion out the finished ice cream and layer alternately with croissant crumbs, strawberry puree and strawberry slices in glasses or waffle cones.
- Serve and enjoy!
