Shakshuka

Shakshuka is a pan-fried dish consisting of eggs in a mixture of tomatoes, peppers and chili. However, it is not only very tasty, but also has a whole host of healthy properties. It is low in carbohydrates and contains lots of important vitamins and minerals. And thanks to the eggs, your protein requirements are also covered. Ingredients
Ingredients for 2 portions
  • 1 red onion
  • 1 tin of chunky tomatoes
  • 1 bell bell pepper (red, yellow or green)
  • 1/2 red chili pepper
  • 1 tbsp olive oil
  • 1 tsp sweet paprika
  • Salt
  • Pepper
  • 3 eggs
  • 1/2 bunch flat-leaf parsley
  • 1 tbsp ras el hanout

Preparation

  1. Peel and halve the onion and chop finely using a food processor.
  2. Wash and deseed the peppers and chili and place in the food processor.
  3. Heat the olive oil in a pan.
  4. Add the onion, bell pepper and chili and sauté.
  5. Add the chopped tomatoes and season with salt, pepper and paprika.
  6. Simmer for a few minutes.
  7. Beat the eggs and add to the tomato mixture.
  8. Put the lid on and let the eggs cook for 5 minutes.
  9. Wash and finely chop the parsley and sprinkle on top.
