Vegetable frittata

A colorful vegetable frittata with peppers, peas, onions and eggs from the pan - tastes delicious hot or cold! This recipe is perfect for anyone looking for a healthy and delicious recipe. Depending on the season, you can vary the vegetables - there are no limits to your imagination.

  • 2 red peppers
  • 1 onion
  • 2 tbsp oil
  • 150 g peas
  • ½ bunch parsley
  • 8 eggs
  • 50 ml milk
  • Salt
  • Pepper
  • Paprika powder

Preparation

  1. Chop the bell pepper and onion into small pieces using the food processor.
  2. Fry both in a pan with hot oil for 2 to 3 minutes.
  3. Wash and finely chop the parsley.
  4. Whisk the eggs with the milk, peas and parsley and season with salt, pepper and paprika.
  5. Pour the egg mixture over the vegetables in the pan.
  6. Leave to set over a medium heat for 10 to 15 minutes.
  7. Cut into pieces and enjoy!
