Vegetable frittata

- 2 red peppers
- 1 onion
- 2 tbsp oil
- 150 g peas
- ½ bunch parsley
- 8 eggs
- 50 ml milk
- Salt
- Pepper
- Paprika powder
Preparation
- Chop the bell pepper and onion into small pieces using the food processor.
- Fry both in a pan with hot oil for 2 to 3 minutes.
- Wash and finely chop the parsley.
- Whisk the eggs with the milk, peas and parsley and season with salt, pepper and paprika.
- Pour the egg mixture over the vegetables in the pan.
- Leave to set over a medium heat for 10 to 15 minutes.
- Cut into pieces and enjoy!
